It is only hard to steer when parking it. You have a beautiful country, drive around and enjoy the crisp feel of the steering before you ditch it. Though how anything that large has survived as long as it has on your narrow Roman built roads and bridges is a wonder. Five years back I took a six week holiday and drove all over Great Britain in a VW minivan (considered a small SUV here in the states, but it is considered a Lorrie (truck) over there because of it's size). I can not imagine taking a full size Impala for a ride through York or Cambridge, but I'll bet you will draw crowds when you do park it.
To answer your question there are complete conversion kits with pump, hoses, brackets (for a small block) and the correct idler and Pittman arms for your car. I would steer clear of power rack and pinion conversions personally.
