Another newbie question from me

Ok, keeping up with my newbie questions as I keep going on my '69, I have a couple question, so bear with me. I know they are not all interior questions, so I will apologize in advance for using the wrong forum for a question.

In one of the pictures attached, there is a knob on the kick panel. I want to remove the kick panel and this is the only part I haven't figured out. I have tried to unscrew it, no dice. Tried to pull it, no dice. Seems to simple to be confusing, but...

Another picture shows my passenger floor pan. Is it too far gone to repair the rusted sections (i.e. do I have to put a new floor pan in or can I just patch the holes?). It might be worth saying I can't weld. Floor was coated with a thick long strand fiberglass, figure It can't get worse.

I want to put headers on it which will require new motor mounts (short and wide, I believe). Anyone have suggestions on mounts that have worked well for them? I am looking at the energy suspension 3.1115r mounts.

Finally, I am going to pull the AC out (not worth changing everything to charge it with new refrigerant), how is the system evacuated so it can be removed? Hopefully this will also expose the blower motor so I can figure out why the HVAC doesn't work.

Appreciate any help. Sorry about the multiple questions, but I have finally found some time to work on this beauty.
